To prepare the dough we need:

  • 1 cup milk at room temperature or slightly warm
  • an envelope of chemical yeast
  • 2 eggs
  • 1/2 cup sugar
  • 2 tablespoons of melted butter
  • A little bit of shawl
  • 4 and a half cups of wheat flour common (not the pastry special as it incorporates yeast and is not what we are looking for)

For the filling:

  • 1 cup of Brown sugar
  • 3 teaspoons of ground cinnamon

Preparation

  • In a small bowl, we mix the warm milk with the yeast chemistry and let it rest for about 15 minutes.
  • While the yeast is resting, let's go mixing the eggs, melted butter, sugar and a pinch of salt in a large bowl and mix carefully.
  • Add the milk and yeast mixture and mix until all the ingredients are incorporated, without beating.
  • Now we are going to incorporate the sifted flour, cup by cup so that it mixes well and does not get lumps.
  • Knead well for about 5 minutesIf the dough is too light, we can add more flour little by little until we achieve the desired texture.
  • We form a ball with the dough and place it in a bowl greased with oil. We cover and we let the dough rise for an hour, in that time it will double its volume.
  • Meanwhile, let's mix the brown sugar with the cinnamon and we reserve.
  • Once the dough is ready, we stretch it until we get a uniform rectangular mass. The approximate measurements that we will get with these amounts of ingredients will be about 40 centimeters by 30.
  • With a kitchen brush, we paint the dough with butter and sprinkle the mixture of brown sugar and cinnamon on top.
  • We peel and we cut the apples into small cubes and add to the dough, taking care to cover the entire surface well.
  • With great care we are rolling the dough, we cover with plastic wrap and put in the refrigerator for about 15 minutes.

  • We prepare a baking dish with a sheet of greaseproof paper and we place the rolls leaving space between them.
  • We put the tray in the oven, without turning on, and let it rest for about 30 minutes.
  • After that time, we take the tray out of the oven and preheat to 180ºC.
  • When the oven reaches temperature, we put the tray with the cinnamon and apple rolls and we bake for about 20 or 25 minutes.
  • Once the rolls are done, we place on a rack to cool. We can sprinkle icing sugar on top, let it cool before drinking and these delicious cinnamon and apple rolls are ready.
