For this reason and with the idea of ​​celebrating International Croquettes Day, which is celebrated today, January 16, we are going to prepare delicious fish croquettes for the whole family. These are the ingredients we need to prepare delicious fish croquettes.

Ingredients:

  • 250 gr fish already cooked
  • 1/2 onion
  • a glass of fish soup
  • 1/2 liter of milk
  • a tablespoon of butter
  • nutmeg
  • 4 tablespoons of flour

  • 2 eggs
  • bread crumbs

Preparation:

  • First we are going to crumble the fish very well, paying close attention to remove any thorn.
  • With a grater, We grate the onion so that it is very fine.
  • In a saucepan, we put the tablespoon of butter over medium heat and let it melt.
  • We add the onion and we cook over low heat until transparent.
  • Next, we add the 4 tablespoons of flour and we stir so that it does not burn.
  • When the flour is cooked, add the fish broth heat while stirring, so that lumps do not form.
  • Once we have a light cream with the flour, we add the warm milk little by little, without stopping to stir.
  • Add salt and a pinch of nutmeg and we continue stirring until obtaining a thick béchamel.
  • We withdraw from the fire alreadywe add the flaked fish, We stir well to distribute it throughout the béchamel.
  • Now, we're going to dump the mix over a wide, low fountain and with a wooden spoon we spread until a layer of about 2 fingers is obtained.
  • We cover with plastic wrap, which must be on the dough itself without leaving space so that air does not enter, so we will avoid a crust from forming on the béchamel.
  • Let cool before putting in the fridge, when the source is warm, refrigerate for about 2 hours.
  • When the dough is solidified, we can start preparing the croquettes.
  • We prepare a small frying pan but with a good bottom and plenty of olive oil for frying.
  • In a bowl we beat the eggs and in another we prepare breadcrumbs.
  • With a spoon we are taking portions of dough and with our hands we make the croquette shape.
  • Pwe grill the fish cakes first by breadcrumbs, then by beaten egg and finally again by breadcrumbs.
  • We are frying the croquettes in the hot oil and in small batches, until the dough is completely finished.
